•1/3 cups cooked, mashed sweet potatoes
•1 cup egg whites
•1 tsp cinnamon
•1 tsp stevia (more if you want sweeter)
• 1/2 tsp baking powder
•1 tbsp flax meal
•1/4 tsp pumpkin pie spice
•1 tsp vanilla extract (optional)
Step 1 – Peel sweet potatoes, cut in cubes and boil on stove until tender.
Step 2 – Remove sweet potatoes from stove and mash with a fork.
Step 3 – Place all ingredients except honey into a blender and blend until smooth.
Step 4- Heat stovetop burner to medium, coat skillet with non-stick cooking spray and pour mixture into rounds on skillet.
Step 5 – Cook pancakes thoroughly and remove from skillet.
Step 6 – Serve warm topped with honey.
