tortillaIngredients:

•2 lbs uncooked boneless skinless chicken breasts

•4 cups organic chicken broth

•1/2 tsp sea salt

•1 tsp oregano

•1 tsp ground cumin

•4 cloves garlic, minced

•4 -10 oz cans of organic diced tomatoes with chilies (Substitute fresh tomatoes with chilies if preferred). For less spice use tomatoes without chilies.

•1 -15 oz can of organic black beans, rinsed & drained

•2 cups chopped white onion

•1 medium green bell peppers, minced

•1 medium red pepper, minced

•2 ears of corn cut from the cob

Directions:

Step 1 – Combine all ingredients and place into crock pot.

Step 2 – Cook on low for approximately 8 hours or high for approximately 4 hours.

Step 3 – Serve with optional toppings including avocados, cilantro, reduced fat cheddar cheese or Greek yogurt.
