Healthy Shrimp Ceviche 


2 lbs cooked small or medium shrimp (remove tails if necessary)

5 Roma tomatoes seeded and diced

1 Red onion chopped

2 Cucumbers peeled and diced

1 Bunch cilantro chopped

1 cup Clamato juice

Juice from 1 Orange

Juice from 2 Lemons

Juice from 5 Limes- or ½ cup lime juice

Salt and pepper as desire

Avocados – optional
