Mashed AvocadoINGREDIENTS:

  • 4 Hardboiled eggs
  • 1/2 avocado
  • 1 tsp. Dijon mustard
  • 1/4 cup diced celery
  • 1/2 of a lime, juiced
  • 1/4 cup diced onion (optional)
  • Salt and Pepper to taste
  • 1 tomato
  • 2 Ezekiel Sprouted Grain English Muffins



 Hard Boiling Eggs

Step 1 – Place eggs in a pot and add cool water approximately one inch above top of eggs.

Step 2 – Turn stovetop on high and heat until boiling.

Step 3 – Once boiling turn stovetop to warm, cover and cook for approximately 12 minutes. Time varies depending on stove and how cooked you prefer eggs.

Step 4 – Remove eggs using a ladle and place in a bowl of ice water to cool. Remove once thoroughly cooled.



Step 1 – Peel and dice hardboiled eggs.

Step 2 – Combine all ingredients excluding muffins and tomatoes in a bowl and mash.

Step 3 – Toast Ezekiel muffins and serve avocado egg salad on muffins topped with sliced tomatoes.
