WHAT IS YOUR CLAIM TO FAME? After having 3 kids (including twins) I went from a 30+ minute 5k runner to a 3:11 marathoner in 4 years!
HOW MANY CHILDREN? 3 Boys
WHAT IS YOUR FAVORITE TREAT/ CHEAT MEAL? HOW OFTEN DO YOU HAVE A CHEAT MEAL? Favorite cheat meal would most definitely be ice cream. Not just plain old vanilla- like chocolate chip cookie dough!!! I work hard and I will reward my hard work! If I am at the park or someplace with the kids I will indulge! For me timing is key! I try to avoid eating my guilty pleasures late at night.
HOW DO YOU EAT WELL AS A MOM ON THE GO? I think snacking often helps! I keep nuts, granola bars, fruit, something on hand. I try to eat frequently to avoid that starving eat anything in sight feeling! If you keep the tank topped off you have more control and better judgement when it comes to being on the go!
WHAT FOOD CAN’T YOU LIVE WITHOUT? Greek yogurt!!! The recipes and foods you can make with Greek Yogurt is endless!!! One of my favorites is Greek Yogurt Pancakes!!! Whoever said Pancakes were unhealthy was seriously mistaken!!! Greek Yogurt is loaded with protein and doubles as my substitute to the cheat meal mentioned above! Greek Yogurt sprinkled with a few frozen chocolate chips is soooo good!!!
WHAT IS YOUR FAVORITE CLEAN MEAL?
Well, I wish I had some creative meal to offer here but I’m a chicken girl! If I’m eating clean it’s grilled chicken and green beans sautéed in a little olive oil and garlic! I can honestly say it never gets old!
ARE THERE ANY FOODS THAT YOU AVOID AT ALL COSTS?
I avoid fast foods! I can’t remember the last time I had a cheeseburger at a fast food restaurant. If I am going to eat a cheeseburger it’s going to be someplace that has real meat! Funny thing is in college my cheat meal 1x a week was a double quarter pounder with cheese and fries! It got to the point though that I was sick after eating it! My body just couldn’t handle it after 6 days of eating heathy-ish.
WHAT’S YOU FAVORITE EXERCISE?
Running! I could run forever! I started running after the birth of our twins in 2012. It was to lose weight at first but then the competitor in me came out!!! I began with 5k’s and I am now a marathoner with 3 marathons under my belt! All of which were Boston Qualifiers!!! I’m chasing that sub 3 marathon this coming year!!
HOW DO YOU STAY MOTIVATED?
I see it!!! I think with anything you want in life you have to see it and believe it!!! I know that my goals are possible and realistic! Knowing that keeps that fire lit! My boys also motivate me to keep going!!! I hope that one day they see my success and realize that they too an achieve anything they set their minds too!!
IF YOU COULD ONLY OFFER ONE TIP TO A MOM TRYING TO GET BACK INTO SHAPE WHAT WOULD IT BE? Be realistic! Make it a lifestyle. Don’t starve yourself or deny yourself things you enjoy! Life’s too short! Instead find balance. Timing is everything when it comes to eating!
WHEN YOU FEEL UNMOTIVATED WHAT DO YOU DO?
I remember why I started! You are NOT going to feel like “it” everyday but it’s effort!! My favorite saying is effort is effort! Do what you can on the bad days! Adjust if you have to but keep working towards your goals!!
HOW HAS TRANFORMING YOURSELF PHYSICALLY MADE A DIFFERENCE IN YOUR LIFE? I am 33 years old and I am healthier and look younger than I did 10 years ago! Age is just a number!!! I am a better mom and wife because I feel good! When you feel good it shows!
DO YOU HAVE A FAVORITE RECIPE TO SHARE?
Blueberry Greek Yogurt Pancakes
Yields 6 pancakes
- 1/4 cup (60 g) plain Greek yogurt
- 1/2 medium, ripe banana (50 g or 1/4 cup [60 ml] mashed)
- 1/2 cup (40 g) rolled oats*
- 2 large egg whites OR 1 large egg
- 1-2 Tbsp (15-30 ml) unsweetened almond milk**
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1/4 cup (35 g) blueberries, fresh or frozen
Preheat a skillet over medium heat and coat it with cooking spray or oil. You want to make sure that it’s very hot before you start cooking your pancakes. Add all the ingredients except for blueberries to a blender in the order listed and blend on high until the oats are fully broken down and the batter is smooth and frothy, about 1-2 minutes. Fold in the blueberries by hand and allow batter to sit for a few minutes so that it thickens up. Pour batter straight from blender onto skillet until desired size of pancakes is reached and cook until the edges have set and bubbles begin to form on the tops of the pancakes, about 3 minutes. Using a spatula, flip and cook for another 2 minutes. Repeat until all the batter is gone, making sure to coat your skillet again with oil between each batch. Top with desired toppings and enjoy!

Comparison is the thief of joy! This is your journey! Embrace it!!! I weighed 125 pounds when I first started running. I thought I needed to weigh less and dropped to 110 pounds for my first marathon. It wasn’t pretty and I didn’t look good! Today I weigh 123 pounds with 10.5% body fat! Don’t look at the scale! Build a strong and healthy body!!! Your beautiful is not the same as someone else’s!!!
