WHAT IS YOUR CLAIM TO FAME?
I’m famous now??? Yesss!!!! Just kidding! I guess you could say lost a little bit of weight.
HOW MANY CHILDREN?
3 crazy, but amazing beautiful boys. One 5, one 3 and one 8 months. Actually, the 8 month old isn’t crazy. He’s still an angel. And he promised me he’ll stay that way. Haha!
WHAT IS YOUR FAVORITE TREAT/ CHEAT MEAL? HOW OFTEN DO YOU HAVE A CHEAT MEAL?
The question is what foods DON’T I like. I definitely love pizza. Bread. Chocolate. And I’m a sucker for cupcakes. I’ve been tracking macros so there’s a little bit of flexibility there, so I feel like I don’t get that urge to cheat or binge as much as I used to with other “diets”. I do leave the weekends more open for social activities and I don’t officially track the macros, although, I have a pretty good idea of my macro numbers since I’ve been doing it for a little while now. It seems like I have at least one kid’s birthday party every weekend, so I usually eat a slice of pizza and some cake. But I don’t completely go crazy either. I try to still eat well in the other meals. And then I never pass on a glass of wine, or 2, if it’s offered of course. But that’s only on the weekends. For now.
HOW DO YOU EAT WELL AS A MOM ON THE GO?
Preparation is key. But that’s even hard to do sometimes when you’re on the go. Pre-packaged protein shakes, clean snacks stored in the car, one stop nutrition shakes, and then already knowing your “smarter” fast food options, if need be.
WHAT FOOD CAN’T YOU LIVE WITHOUT?
Cheese. And chocolate. Yum!
WHAT IS YOUR FAVORITE CLEAN MEAL?
This is hard. I’m actually terrible at making decisions. Ok, if I had to choose just one……..protein shake pancakes!! Would you like the recipe?
PROTEIN SHAKE PANCAKES
- 1/2 banana
- 1/2 Scoop of grass fed whey protein
- 1 Egg
- A dash of organic vanilla extract
Blend in a bullet and pour like a pancake in a pan sprayed with coconut oil, just like a pancake.
Sometimes I’ll add blueberries or a few chocolate chips, if I’m craving it, add them after you pour the batter onto the pan. Flip and cook, again, just like a regular pancake.
I use Earth Balance soy free butter substitute if I need the fat for my macros and then a sugar free non gmo syrup I found online. It’s delicious!
ARE THERE ANY FOODS THAT YOU AVOID AT ALL COSTS?
I try to avoid soda. And sodium. But I love salty so that’s a tough one for me.
WHAT’S YOU FAVORITE EXERCISE?
Teresa Auva’a’s dance cardio classes! She teaches at lifetime. Can’t be beat!
HOW DO YOU STAY MOTIVATED?
I’m not sure. I feel like I’m done having children now so it’s just that time for me. There’s no looking back. No excuses any longer. It’s just become part of life. I’m trying to set a good example for my kids and show them that health is a lifestyle. Working out and eating well is just how you live life. Finding exercises you love to do is life changing. The cardio dance classes are so much fun, it doesn’t feel like exercise. When I workout on my own and not in the dance classes, I make sure I have good music. I love music. If I don’t have good music, I just can’t, even in cardio dance classes. Music is key for me!
IF YOU COULD ONLY OFFER ONE TIP TO A MOM TRYING TO GET BACK INTO SHAPE WHAT WOULD IT BE?
Knowledge. If you have knowledge, it’s so much easier. Follow experts, like Shannon. We have access to so many people with social media, etc. There are tips, cheats, food ideas, workouts, etc. You could be working so hard but doing the wrong thing or eating wrong. I feel like this time around has been so easy for me. I used to struggle and work so hard and get so frustrated. I’d be miserable eating gross or bland foods or not eating certain things or feeling starved. But also find what works for you. And EAT!!! That was a big problem for me. I would be so busy I would forget to eat and ruined my metabolism. And know you’re not alone though. We’ve all struggled.
WHEN YOU FEEL UNMOTIVATED WHAT DO YOU DO?
Honestly, I’ve been going at it hard for 2 months now and I haven’t been unmotivated yet. I’m hoping I’ve found what works for me, and that it will stay this way. I enjoy going to the gym now. I enjoy feeling good. And I’m not depriving myself from foods or cravings, just moderating them. But I guess if the day ever comes where I’m not motivated, I’ll let that day pass and know there’s always tomorrow. Don’t let one bad day ruin your whole journey. It’s a minor setback, and it might not even set you back as much as you think. Keep going. If I can, you can!
HOW HAS TRANSFORMING YOURSELF PHYSICALLY MADE A DIFFERENCE IN YOUR LIFE?
It’s a lot easier to carry 3 children now. Yes, I’ve had to do it. Haha! It’s nice to be able to get up off the ground with ease after playing with my crawling baby. Just having energy is a great feeling. I mean, I have 3 boys. Have you seen the movie Overboard? Anyone? Too old for ya?
DO YOU HAVE A FAVORITE RECIPE TO SHARE?
Thai lettuce Wraps
- 2 lbs ground chicken
- 1 TB coconut oil
- 3 cloves of garlic chopped
- 1/8 tsp ground ginger
- 1/2 cup shredded carrots
- 4 green onions chopped
- 1 – 8 oz can of sliced water chestnuts drained and chopped
- 3 TB hoisin sauce
- 2 TB soy sauce or sub mrs braggs amino
- 1 TB rice vinegar
- 2 TB peanut butter
- Chili paste to desired spice level
- Iceberg lettuce or romaine hearts or butter leaf lettuce, made into cups.
In a large skillet, heat coconut oil. Add chicken, garlic, ginger, carrots, green onions, and water chestnuts until chicken begins to brown. Then add the remaining ingredients and sautée until chicken is done.
Fill lettuce cups and enjoy! You can get creative and add any additional veggies you might like. Broccoli slaw is tasty on top!

You can do this! My husband asked me recently if I thought I’d actually ever lose the weight. This sounds so terrible, but he meant it sweetly, like in that “you’re really doing it!” kinda way. And, I have to say, I’m an extremely positive person. So positive. But I don’t know that I really did think it would be possible. I had tried so many things, so many diets. I was still happy with life, but I knew I’d be happier if I was healthier. Almost like I’d brush it under the rug with myself. I was in denial of how unhappy I was overweight. I’m still a ways away, but I see the light! It’s actually coming to fruition. I know I will get to my goal now. I see it happening. I used to always avoid my reflection in windows, but the other day, I accidentally caught a glimpse and I actually wasn’t disgusted with what I saw. I was shocked, I didn’t think it was me at first. Don’t give up! Whatever your goals are. In your health journey and in life in general.
Some staple foods that help me curb cravings:
• Dave’s Thin Sliced Bread, toasted with Earth Balance soy free butter substitute, sprinkle cinnamon and xylitol, tastes like a cinnamon roll.
• Baked cheese crackers. Literally baked cheese. I’ve found so many different brands everywhere. There’s some fat, but all protein too. You can also make your own easily. Google or Pinterest it.
• There’s a cheese substitute called the original almond mozzarella style by Lisanatti Foods. It’s delicious and melts pretty decent.
• Stevia drops to sweeten anything a little more. Go for it! Your protein shakes, your zevia sodas. If you like that sweetness, do it! Whatever keeps you from caving into the bad stuff.
• Xylitol crystals. Like the stevia drops but consistency like sugar. No carbs or any nutritional value and only 10 cals per serving. It’s actually good for your teeth too. Go figure. But I also add that on anything that needs to be a little sweeter. Especially not so ripe berries.
