•1 tbsp. olive oil

•1 large red bell pepper,

•1⁄4 cup chopped green onion

•1 cup chopped mushrooms

•1 cup cooked wild rice 3 laughing cow light triangles

•1 cup egg whites

•2 whole eggs

•1 clove garlic minced

•1⁄4 tsp. paprika

•1⁄4 tsp. salt

•1⁄4 tsp. pepper




1-Preheat oven to 375 degrees. Coat round 9-inch baking dish with nonstick spray, set aside.

2-Heat 1⁄2 tbsp. olive oil in a medium pan. Sauté red bell pepper until soft then set aside. In the same pan, add remaining olive oil, green onion and garlic; stir on medium heat for 1 minute.

3-Add mushrooms; cook and stir for 5 minutes or until tender. Stir in red peppers, wild rice, salt, pepper, paprika and cheese.

4-Pour sautéed vegetables and rice into baking dish. Use a spatula, press mixture to bottom.

5-Beat eggs in a medium bowl and pour over top vegetables. Bake for 20-25 minutes until eggs are cooked. Enjoy hot or cold.
