•Turkey meatballs with Sun dried tomatoes

•4 spoonful’s of sun dried tomatoes in olive oil

•1/4 cup of Ezekiel Bread crumbs (Use food processor to grind)

•1 lb lean ground turkey

•1 large egg, lightly beaten

•1 tbs fat-free milk

•1 can of organic tomato sauce

•1 garlic clove

•1/4 tsp. pink salt

•1/8 tsp. freshly ground pepper

•1 package of whole wheat or brown rice pasta


Step 1 – Heat tomato sauce of your choice

Step 2 – In food processor pulse Ezekiel bread and remove once finely ground.

Step 3 – In food processor pulse sun dried tomatoes, garlic clove, 1/4 tsp salt and 1/8 tsp of pepper. Add bread crumbs to mixture and combine.

Step 4 – Transfer mixture into a large bowl and kneed in turkey, egg and milk

Step 5 – Roll mixture into 20 small balls. Drop them into simmering sauce and allow them to cook for approximately 45 minutes – 1 hour.

Step 6 – Cook pasta per instructions on box.

Step – 7 Cook whole wheat pasta according to instructions on box and serve with meatballs.
